All the Colors in a Roll

This is inspired by Sara Forte's book, which by the way is amazing!

So much fun to make!
Makes two big rolls:
-4 big collar green leaves
-1cup dry red quinoa
-1 yam (baked)
-handful of alfa alfa sprouts per roll
-1/2red yellow pepper
-1 avocado
-2 TBLS tahini or to taste (you can add a little lemon)
-pinch of ginger
-2 teaspoon sesame oil
-1teaspoon miso paste
-2 TBLS pesto

How you put it together:
-prep quinoa&mix in tahini, let sit
-cut the bottom of stem off of collard greens
-place 2 leaves "head to toe" stem side in, round side facing out
-mix miso paste into sesame oil
-cut avocado and yellow pepper in thin slices marinate in sesame oil and miso paste
Make layers, I recommend this order:
-quinoa, avocado, yellow pepper, alfaalfa, yam
-top it off with a little pesto!

E whala!
Now the fun part-roll it up!
Ps...you can use a string to keep it together!
