Vegan HazyCoco Banana Amazingness Bread
2/3 cup unbleached cane sugar (I use Raw Turbinado)
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon sea salt
1 large yummy banana, mashed
1/2 cup of organic unsweetened apple sauce1/2 cup water2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
1 handful or to your taste hazelnuts

1/4 cup shredded unsweetened coconut meat
a few chunks of 100% dark chocolate

-Preheat the oven to 350 F.

-Place the flour, sugar, baking soda, cinnamon, ginger, and salt in a medium bowl and whisk until well mixed.
-Add in the banana, apple sauce, water, oil, vinegar, and vanilla extract and mix it up.
-Once its all nice and blended in add hazelnuts, chocolate and coconut
-Transfer the batter to the prepared pan.

-Sprinkle the coconuts over the top :)
-Bake for 25 to 40 minutes …bake until you can put a fork through the center and nothing will stick to it….that's why I had to cut a line through it's center! Turned out nice though!

Let your loaf cool before cutting it. Serve hot, warm, or at room temperature…suggestion to top it off: add a scoop of coconut ice cream…..OMG to die for!!!!
